What a greaseproof basket liner is for
Pubs, wing joints, fish houses, diners and food trucks serve in baskets because baskets stack, wash and never break. The liner is what makes that basket presentable.
The first photo shows a white liner with a one-color teal logo scattered at random across the face. The second shows a plain cream sheet with one corner turned, the way a liner looks before it drops into the basket.
A liner goes in flat, the food lands on it, and the corners rise up the basket sides on their own. When the customer is done, the liner lifts out with every crumb and the basket is dry.
How the liner sits in the basket
A liner should be bigger than the basket floor by about two inches each way. That extra paper climbs the sides and stops oil creeping over the edge onto the plastic.
Fried food comes out of the fryer steaming. The sheet lets that steam escape upward through the open top while holding the oil that drains down. Fries stay crisp longer than they would on a closed wrap.
Wing sauce is the hard case. A high hold-out liner keeps buffalo sauce on the top face for the length of a meal. A light deli sheet would show it on the underside in minutes.
The liner holds its corners because the paper is stiff. That is the reason basket liners run heavier than sandwich sheets of the same size.
Which liner size fits a standard plastic basket?
Measure the inside floor of your basket and add two inches to each side. If the basket is oval, measure the longest and widest points.
| Typical size | Basket it lines |
|---|
| 10 × 10.75 in | Small oval and round baskets for sides, slider baskets |
|---|
| 12 × 12 in | Standard rectangular fry baskets, wing baskets, sandwich baskets |
|---|
| 12 × 16 in | Long baskets for fish and chips, loaded fries, two-item combos |
|---|
| 16 × 24 in | Sharing trays, party platters, catering half-sheet pans |
|---|
Most pubs find 12 × 12 in handles the whole basket menu. Sizes outside these four are custom cuts, and the sheet size guide by food helps if your baskets are odd shapes.
Can one liner handle fries, wings and a sauce cup?
Yes, if it is heavy enough. A 36 to 40 lb liner takes a pile of fries, six sauced wings and a 2 oz sauce cup. It will not soak through or tear at the corner when lifted.
The trick is the cup. A plastic sauce cup sweats on the outside when it comes from the fridge, and that condensation is water, not oil. Water softens greaseproof over about half an hour.
For a long sit-down service, put the cup on the liner at the last moment. For a fast counter, it does not matter.
Fried fish is the one item that wants the longer 12 × 16 in liner, because the fillet lies flat and the fries go beside it rather than on top.
Weight and finish for a liner that gets picked up
Basket liners are lifted out full, often by one corner, so weight is the main spec. Here is how we pitch it on the quote.
- About 32–35 lb: dry sides, pretzels, bread baskets, anything without sauce.
- About 36–38 lb: fries, tenders, fried fish, the usual pub basket.
- About 40 lb: sauced wings, loaded fries, sharing trays lifted by hand.
- Smooth finish as standard; a lightly embossed face is possible if you want the liner to look less like paper.
The guide to choosing a greaseproof paper weight explains why a liner and a wrap of the same size need different sheets.
Printing on basket liners: scatter repeats and color
The scatter print in the first photo is the classic basket liner design. The logo appears at different angles and spacings across the sheet, so some of it always shows around the food. One ink, one plate, and it looks finished.
A single logo in one corner also works, because the corner stands up the basket wall where the customer sees it. Put it in two opposite corners so the liner can go in either way.
One or two colors are the norm. We match to Pantone solid-coated swatches and the inks are food-safe soy or water-based, dried matte so hot fries do not pick them up.
Avoid solid blocks of ink near the center of the sheet. The center takes the most oil, and a flooded block there goes patchy as the oil moves through.
Should a basket liner be white or cream?
White liner is the brighter of the two. It makes a golden fry look golden and takes a teal, red or navy logo cleanly, as the first photo shows.
Cream liner, the stock in the second photo, is softer and hides a small oil mark better. It suits pubs, barbecue and fish houses that want the basket to look homely rather than fast-food bright.
Both print the same way and weigh the same. If you serve a lot of sauced food, cream forgives more. If the brand is bright, white carries the color.
How many liners does a busy basket station use?
Count your baskets served on a Friday night and multiply by a week. A pub doing 300 baskets a day uses about 2,000 liners a week, so a 5,000-sheet case lasts two and a half weeks.
The minimum run is 1,000 sheets of one size, which suits a food truck or a small café. Anything serving baskets as the main format should order in cases of 5,000 or 10,000 to keep the unit cost down.
Two sizes, say 12 × 12 in for singles and 16 × 24 in for sharing trays, are quoted together, each with its own minimum.
Packing, dispensing and what to avoid
Liners ship flat in cases of 1,000. Keep the open case near the fryer station, printed face up, so the cook grabs one and drops it straight in.
Do not use a liner as a to-go wrap for a basket order. It is cut and weighted to lie flat, and folded around food it will crack at the corners. A wrap sheet is the right paper for the bag.
Do not order a liner cut to the exact basket floor. Without the two inches of climb, oil wicks straight over the edge.
Do not store the open case under the fryer hood. Heat dries the sheet and a dry liner splits when it is lifted out full.
Basket liners sit alongside wraps and deli sheets in the greaseproof sheets range if you want to compare them side by side.
How to order custom basket liners
